tasty juice recipe that is wholesome and nutritious.

1) Cool Carrot - Pineapple Juice

 

Ingredients:

     ¾ cup shredded carrots (1 large)
     1 can (8 ounces) crushed pineapple in juice
     ½ cup water
     ½ cup crushed ice

Method

1) In the blender, at medium speed, blend carrots and water for about one minute.
2) Strain and then return the liquid to the blender.
3) Add the remaining ingredients.
4) Blend at low speeds until smooth.
5) Pour into two glasses.

The above concoction makes two servings and can be very tasty and healthy.

Protein - 2 grams
Fat - 0%
Carbohydrate - 45 grams
Cholesterol - 0%
Sodium - 30 milligrams
Potassium - 545 milligrams

2) Potato soup

Ingredients:

    4 cups water
    5 large potatoes, peeled and quartered
    2 large carrots, scrubbed and chopped
    1cup diced onions
    4 ounces fresh mushrooms, diced
    ½ teaspoon extra-spicy black pepper
    1 clove garlic, minced
    3 tablespoons vegetable broth seasoning
    3 tablespoons date "sugar"

Method


1) Combine the water, potatoes, carrots and onions in a large pot.
2) Bring to a boil.
3) Turn down the heat and simmer for fifteen minutes.
4) Blend the mixture in a blender until smooth.
5) Return to the pot and add the mushrooms and seasonings.
6) Simmer for 10 minutes more.


Serve garnished with parsley or chopped chives
